The www directory is a shortcut to public_html, and the other directories control different settings and features of your account, and generally should not be touched.
If you have Frontpage extensions installed in your account, there will be several directories with names like _vti_bin, _vti_cnf, etc. If you do not use Frontpage extensions, you can disable the facility in the control panel, and these directories will be deleted.
